Ingredients
  

  • 1 box yellow cake mix
  • 1 can pumpkin puree 15 ounces
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup chopped nuts optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, whisk together the cake mix and pumpkin pie spice.
  • In a medium mixing bowl, combine the pumpkin puree, vegetable oil, and eggs.
  • Pour the wet ingredients into the dry ingredients and stir until well combined.
  • Fold in the chopped nuts if using.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a cooling rack.

Notes

For best results, make sure all your ingredients are at room temperature before mixing. You can add a handful of chocolate chips or dried cranberries for extra flavor. Adjust the amount of pumpkin pie spice to suit your taste preference, and store leftovers in an airtight container for up to three days.
