Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans optional
  • 1/4 cup all-purpose flour for streusel
  • 1/4 cup brown sugar for streusel
  • 1/2 teaspoon ground cinnamon for streusel
  • 3 tablespoons butter melted for streusel

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, whisk together 1 3/4 cups flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  • In a medium bowl, mix vegetable oil, granulated sugar, brown sugar, eggs, pumpkin puree, milk, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in chopped pecans if using.
  • Pour the batter into the prepared loaf pan.
  • In another bowl, combine 1/4 cup flour, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon for the streusel topping.
  • Stir in melted butter until the mixture resembles coarse crumbs.
  • Sprinkle the streusel topping evenly over the batter.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a cooling rack.

Notes

For best results, use fresh pumpkin puree or canned pumpkin puree that is not spiced or sweetened. You can also add more spices to taste if you prefer a spicier bread. Be mindful not to overmix the batter to keep the bread light and fluffy.
