Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon chai spice mix
  • 1/2 cup pumpkin puree
  • 1/4 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, and chai spice mix.
  • In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the pumpkin puree, egg, and vanilla extract to the butter mixture and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  • Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.
  • Remove from the oven and let the cookies rest on the baking sheet for 5 minutes.
  • Transfer the cookies to a cooling rack to cool completely.

Notes

For a more robust chai flavor, consider adding an extra 1/4 teaspoon of chai spice mix. Ensure the butter is at room temperature for easier mixing, and don't overmix the dough to avoid dense cookies. If you like a bit of texture, try adding chopped nuts or white chocolate chips to the dough.
