Ingredients
  

  • 2 cup milk
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 1/4 cup maple syrup
  • 2 tablespoon cornstarch
  • 1 teaspoon chai spice blend
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup walnuts chopped
  • 1 tablespoon butter

Instructions
 

  • In a saucepan, combine milk, pumpkin puree, sugar, chai spice blend, vanilla extract, and salt over medium heat.
  • Whisk cornstarch with a little milk in a small bowl until smooth, then add to the saucepan.
  • Stir constantly until the mixture thickens, about 10 minutes.
  • Remove from heat and let it cool slightly.
  • Divide the pudding mixture among four serving cups.
  • In a separate pan, heat butter and add walnuts and maple syrup, stirring until walnuts are coated.
  • Swirl the maple walnut mixture into each pudding cup.
  • Allow the puddings to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.

Notes

To enhance the flavor of this pudding, consider toasting the walnuts lightly before coating them with butter and maple syrup. This will bring out a deeper, nuttier flavor. If you prefer a smoother texture, strain the pudding mixture through a fine sieve before dividing it into serving cups.
