Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
  • 1/3 cup granulated sugar
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a loaf pan and set aside.
  • In a mixing bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  • In another bowl, beat together 3/4 cup sugar and butter until fluffy.
  • Add pumpkin puree, 2 eggs, and vanilla to the butter mixture and mix well.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • In a separate bowl, beat cream cheese and 1/3 cup sugar until smooth.
  • Add 1 egg to the cream cheese mixture and mix until combined.
  • Pour half of the pumpkin batter into the prepared loaf pan.
  • Spread the cream cheese mixture over the pumpkin layer.
  • Top with the remaining pumpkin batter and smooth the surface.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
  • Let it cool completely for an additional 20 minutes before slicing.

Notes

For best results, ensure all ingredients are at room temperature before mixing to achieve a smooth batter. If you like your bread with a stronger spice flavor, feel free to adjust the spices according to your taste. Be careful not to overmix the batter as it can make the bread dense. Store any leftovers in an airtight container in the refrigerator to maintain freshness.
