Ingredients
  

  • 1 cup cottage cheese
  • 1/2 cup pumpkin puree
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1/4 cup whipped cream
  • 2 tablespoons crushed graham crackers

Instructions
 

  • Place cottage cheese, pumpkin puree, honey, vanilla extract, pumpkin pie spice, and cinnamon in a blender.
  • Blend the mixture until smooth and creamy.
  • Transfer the mixture to a mixing bowl and gently fold in the whipped cream.
  • Spoon the mixture into serving cups.
  • Top each serving with crushed graham crackers.
  • Refrigerate for at least 30 minutes before serving.

Notes

For best results, use full-fat cottage cheese to ensure a creamy texture. Adjust the sweetness by adding more or less honey to suit your taste. Ensure the pumpkin puree is well-drained to avoid a watery consistency. This dessert can also be prepared a day in advance, allowing the flavors to meld beautifully.
