Ingredients
  

  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/3 cup chopped pecans optional
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon ground cinnamon for glaze

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
  • In a large mixing bowl, whisk together pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In a medium mixing bowl, combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chopped pecans if using.
  • Divide the batter evenly among the prepared muffin liners.
  • Bake in the preheated oven for 18 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to rest in the tin for 5 minutes before transferring to a cooling rack.
  • In a small bowl, mix powdered sugar, milk, and ground cinnamon to create a glaze.
  • Drizzle the glaze over the cooled muffins before serving.

Notes

For best results, ensure the canned pumpkin puree is well-drained to prevent excess moisture in the batter. If you prefer a more pronounced cinnamon flavor, consider adding a pinch of cinnamon to the glaze. These muffins are perfect for breakfast or as a sweet treat and can be stored in an airtight container for up to three days.
