Pumpkin Coconut Curry Beef Chuck Stew

Ingredients
  

  • 2 pound beef chuck cut into cubes
  • 2 tablespoon vegetable oil
  • 1 large onion chopped
  • 4 clove garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili flakes
  • 1 can pumpkin puree 15 ounces
  • 1 can coconut milk 14 ounces
  • 2 cup beef broth
  • 2 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 potatoes peeled and cubed
  • 3 carrots sliced
  • salt and pepper to taste
  • fresh cilantro chopped, for garnish

Instructions
 

  • Heat the vegetable oil in a large pot over medium-high heat.
  • Add the beef chuck cubes and brown them on all sides, then remove and set aside.
  • In the same pot, add the chopped onion, minced garlic, and grated ginger, cooking until the onion becomes translucent.
  • Stir in the curry powder, ground cumin, cinnamon, and chili flakes, cooking for an additional minute until fragrant.
  • Add the pumpkin puree, coconut milk, and beef broth to the pot, stirring to combine.
  • Return the browned beef to the pot, then add fish sauce and brown sugar, stirring well.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2 hours.
  • Add the cubed potatoes and sliced carrots to the pot, covering and continuing to simmer for another hour until the vegetables are tender.
  • Season the stew with salt and pepper to taste.
  • Allow the stew to rest for 10 minutes before serving.
  • Garnish with fresh chopped cilantro before serving.

Notes

It's important to cut the beef chuck into uniform pieces to ensure even cooking throughout the stew. For a richer flavor, consider browning the beef in batches so as not to overcrowd the pot. Adjust the level of spice by adding more or less chili flakes based on your preference. If the stew becomes too thick, simply add a little more beef broth to reach your desired consistency.
