Ingredients
  

  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the loaf pan with a small amount of vegetable oil.
  • In the large mixing bowl, whisk together the pumpkin puree, eggs, vegetable oil, water, and sugar until smooth.
  • In the medium mixing bowl, combine the flour, baking soda, cinnamon, nutmeg, allspice, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the dried cranberries gently with the spatula.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the loaf from the oven and let it rest in the pan for 10 minutes.
  • Transfer the bread to a cooling rack to cool completely before slicing.

Notes

For best results, ensure all ingredients are at room temperature before mixing, as this can help achieve a smoother batter. Feel free to add nuts like walnuts or pecans for extra texture. If you prefer a sweeter loaf, consider adding a simple glaze or a dusting of powdered sugar on top once the bread is cooled.
