Ingredients
  

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 ounces cream cheese softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, whisk together pumpkin puree, vegetable oil, eggs, and sugar until well combined.
  • In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  • In a separate bowl, beat the cream cheese with sugar, egg yolk, and vanilla extract until smooth.
  • Pour half of the pumpkin batter into the loaf pan.
  • Spread the cream cheese mixture evenly over the pumpkin batter.
  • Top with the remaining pumpkin batter, smoothing the surface with a spatula.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 15 minutes before transferring to a cooling rack.

Notes

For the best results, ensure the cream cheese is softened before mixing to achieve a smooth consistency. Feel free to adjust the spices to your personal taste, or even add some chopped nuts or chocolate chips for added texture and flavor.
