Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup dried cranberries
  • 1/4 cup chopped nuts
  • 1/4 cup chocolate chips
  • 1/8 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease an 8x8 inch baking pan and set aside.
  • In a mixing bowl, combine the rolled oats, pumpkin puree, honey, almond butter, and vanilla extract.
  • Stir in the ground cinnamon, ground nutmeg, ground ginger, and salt.
  • Fold in the dried cranberries, chopped nuts, and chocolate chips.
  • Pour the mixture into the greased baking pan and spread it evenly using a rubber spatula.
  • Bake in the preheated oven for 25 minutes or until the edges are golden brown.
  • Remove the pan from the oven and place it on a cooling rack.
  • Allow the bars to cool completely in the pan for at least 30 minutes before cutting.
  • Slice into 12 bars and serve.

Notes

For best results, use pure pumpkin puree, not pumpkin pie filling, to keep the sugar content controlled. You can substitute almond butter with any nut butter of choice, and feel free to experiment with different mix-ins like seeds or different dried fruits to suit your taste preferences. These bars can be stored in an airtight container for up to a week, making them a perfect make-ahead snack.
