Ingredients
  

  • 4 large eggs
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 8 slices bread
  • 2 tablespoons butter
  • 1 tablespoon maple syrup
  • 1 pinch salt

Instructions
 

  • In a large mixing bowl, whisk together eggs, milk, pumpkin puree, vanilla extract, cinnamon, nutmeg, and salt until well blended.
  • Heat a frying pan or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.
  • Dip each slice of bread into the pumpkin mixture, ensuring both sides are well coated.
  • Place the coated slices on the heated pan or griddle.
  • Cook the bread for approximately 3-4 minutes on each side until golden brown.
  • Remove the French toast from the pan and let it rest for 5 minutes before serving.
  • Serve the French toast warm with maple syrup drizzled on top.

Notes

For best results, use day-old bread to absorb the pumpkin mixture more effectively and ensure the pan is not too hot to prevent the toast from burning. Adjust the spices to taste if desired, and consider adding a sprinkle of powdered sugar or chopped nuts for extra texture and flavor.
