Ingredients
  

  • 12 ounces pasta of choice
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  • In a medium saucepan, heat olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant.
  • Add the pumpkin puree, heavy cream, nutmeg, salt, and black pepper to the saucepan and whisk until smooth.
  • Bring the sauce to a gentle simmer, then reduce the heat to low and continue to simmer for 5 minutes.
  • Drain the cooked pasta using a colander and return it to the pot.
  • Pour the pumpkin sauce over the pasta and toss well to combine.
  • Add the grated Parmesan cheese to the pasta and mix until the cheese is melted and the sauce is creamy.
  • Let the pasta rest for 5 minutes to allow the flavors to meld together.
  • Serve the pasta hot, garnished with chopped fresh parsley.

Notes

For the best results, use freshly grated Parmesan cheese as it will melt more smoothly into the sauce. Adjust the seasoning to taste after mixing the sauce with the pasta, as different brands of pumpkin puree can vary in sweetness. Consider adding a pinch of cayenne pepper for a hint of spice, or mix in some cooked bacon or pancetta for extra flavor and texture.
