Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1 can pumpkin puree (15 ounces)
  • 1 can evaporated milk (12 ounces)
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a mixing bowl, combine flour, oats, and brown sugar.
  • Stir in melted butter until the mixture is crumbly.
  • Press the mixture evenly into the bottom of the prepared baking dish.
  • In another bowl, whisk together pumpkin puree, evaporated milk, eggs, granulated sugar, cinnamon, ginger, nutmeg, cloves, salt, and vanilla extract until smooth.
  • Pour the pumpkin mixture over the crust in the baking dish.
  • Bake for 50 minutes or until the filling is set and a toothpick inserted comes out clean.
  • Let the bars cool in the baking dish for at least 1 hour before cutting them into squares.

Notes

For best results, ensure all ingredients are at room temperature before mixing to ensure even blending. Allowing the bars to cool completely before cutting will help in achieving clean slices. If you prefer a spicier flavor, you can adjust the spices to your taste. These bars can be stored in an airtight container in the refrigerator for up to 3 days.
