Ingredients
  

  • 1 cup rolled oats
  • 2 cups water
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons maple syrup
  • 1/4 cup milk of choice
  • 2 tablespoons pecans chopped

Instructions
 

  • In a saucepan, combine the rolled oats and water.
  • Bring the mixture to a boil over medium heat.
  • Stir in the pumpkin puree, pumpkin pie spice, and salt.
  • Reduce the heat to low and let it simmer for 5-7 minutes, stirring occasionally.
  • Once the oats are cooked and creamy, remove the saucepan from the heat.
  • Stir in the maple syrup and milk of choice until well combined.
  • Divide the oatmeal into two bowls.
  • Top each serving with chopped pecans before serving.

Notes

For added flavor, consider topping the oatmeal with a sprinkle of cinnamon or nutmeg. You can also substitute almond milk or coconut milk to make the dish dairy-free. Adjust the sweetness by adding more or less maple syrup according to your taste preferences.
