  • 2 Mason jars or airtight containers

Ingredients
  

  • 1 cup rolled oats
  • 1 cup milk of choice
  • 1/2 cup pumpkin puree
  • 1/4 cup Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Optional toppings: chopped nuts, cinnamon, nutmeg

Instructions
 

  • In a mixing bowl, whisk together the milk, pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin pie spice, and salt until well combined.
  • Add the rolled oats to the mixture and stir until the oats are fully coated.
  • Divide the mixture evenly between two mason jars or airtight containers.
  • Seal the jars or containers and refrigerate them for at least 6 hours or overnight.
  • Before serving, give the oats a good stir and add any optional toppings like chopped nuts or a sprinkle of cinnamon.

Notes

For best results, use old-fashioned rolled oats rather than quick oats for a creamier texture. You can adjust the sweetness by adding more or less maple syrup to suit your taste. Additionally, feel free to substitute the milk with a plant-based alternative if desired.
