Ingredients
  

  • 1 pound sausage crumbled
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 cups chicken broth
  • 2 cups pumpkin puree
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat and cook the sausage until browned.
  • Remove the sausage from the pot and set aside.
  • In the same pot, add the onion and garlic, cooking until the onion is translucent.
  • Stir in the chicken broth and pumpkin puree, bringing the mixture to a simmer.
  • Add the cooked sausage back into the pot.
  • Stir in the heavy cream, salt, black pepper, nutmeg, and cayenne pepper.
  • Simmer the soup for 10-15 minutes until all flavors are well blended.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Serve the soup hot, garnished with fresh parsley.

Notes

For a richer flavor, try using a mix of spicy and sweet sausage. If you prefer a thicker consistency, you can add a tablespoon of flour when cooking the onions and garlic. Adjust the spices to your taste, especially if you like a spicier soup.
