Ingredients
  

  • 2 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup canned pumpkin puree
  • 1/2 teaspoon orange food coloring optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Mix in the pumpkin puree and orange food coloring until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  • Use the pumpkin-shaped cookie cutter to cut out cookies and place them on the prepared baking sheets.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For the best results, ensure that your butter is at room temperature before mixing to achieve a smooth and fluffy dough. If you want brighter, more vibrant cookies, consider adding a few more drops of orange food coloring. These pumpkin-shaped cookies can be decorated with icing or sprinkles once cooled for a festive touch.
