Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  • In a mixing bowl, cream together 1 cup of sugar and butter until light and fluffy.
  • Add vanilla extract and eggs to the bowl, one at a time, mixing well after each addition.
  • Stir in the pumpkin puree until fully combined.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • In a small bowl, mix 1/4 cup sugar with 1 teaspoon cinnamon, then sprinkle evenly over the batter.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

To ensure an even bake, make sure all your ingredients, especially the butter and eggs, are at room temperature before starting. If you prefer a more pronounced snickerdoodle flavor, you can increase the amount of cinnamon in the topping. Remember to store leftovers in an airtight container to maintain the bread's moisture.
