Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup water
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
  • Add the eggs, pumpkin puree, and water to the sugar mixture and whisk until smooth.
  • In a medium mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  • Gradually add the dry ingredients to the wet ingredients, stirring with a spatula until just combined.
  • Pour the batter into a greased loaf pan, spreading evenly with a spatula.
  • Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the bread cool in the pan for 10 minutes.
  • Carefully transfer the bread to a wire rack and allow it to cool completely before slicing.

Notes

For best results, ensure that all ingredients are at room temperature before beginning, as this helps with even mixing and consistency. Additionally, resist the temptation to overmix the batter, as this can lead to a dense texture in the finished bread.
