Pumpkin-Spiced Beef Stew with Sweet Potatoes

Ingredients
  

  • 2 pound beef stew meat cut into 1-inch cubes
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 2 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cup beef broth
  • 2 cup sweet potatoes peeled and cubed
  • 1 cup carrots sliced
  • 1 cup canned pumpkin puree
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium-high heat.
  • Add beef stew meat to the pot and brown on all sides.
  • Remove the beef from the pot and set aside.
  • In the same pot, add onions and garlic, cooking until soft.
  • Stir in pumpkin pie spice, salt, and pepper, cooking for 1 minute.
  • Return the beef to the pot and add beef broth.
  • Bring the mixture to a boil, then reduce heat to low and cover.
  • Simmer the stew for 1 hour, stirring occasionally.
  • Add sweet potatoes, carrots, pumpkin puree, and Worcestershire sauce to the pot.
  • Stir well and add the bay leaf, then cover and simmer for another 30 minutes.
  • Remove the bay leaf and let the stew rest for 10 minutes before serving.

Notes

For best results, ensure that the beef is browned well for extra flavor before adding it back to the pot. Adjust seasoning according to taste, and consider adding a splash of apple cider vinegar for an additional tangy note. If the stew is too thick, you can add more beef broth to reach your desired consistency.
