Pumpkin-Spiced Chili Verde Pork Stew

  • 1 Cutting board

  • 1 Wooden spoon

  • 1 measuring spoon set

Ingredients
  

  • 2 pound pork shoulder cubed
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 2 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup pumpkin puree
  • 2 cup chicken broth
  • 1 cup green salsa
  • 2 can diced green chilies 4 ounces each
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium-high heat.
  • Add cubed pork shoulder and brown on all sides.
  • Remove pork and set aside.
  • In the same pot, add chopped onions and cook until translucent.
  • Stir in minced garlic, cumin, cinnamon, smoked paprika, salt, and black pepper.
  • Return the pork to the pot with the onions and spices.
  • Add pumpkin puree, chicken broth, green salsa, and diced green chilies.
  • Stir well and bring to a boil.
  • Reduce heat to low and simmer uncovered for 1 hour.
  • Stir in lime juice and chopped cilantro.
  • Let the stew rest for 10 minutes before serving.

Notes

For extra flavor, consider roasting the pork shoulder cubes in the oven before adding them to the stew for a deeper taste. Adjust the level of spice by adding more or less green salsa to suit your preference. If you want a thicker stew, let it simmer longer until it reaches the desired consistency.
