Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 2 pound pumpkin peeled and cubed
  • 2 carrot sliced
  • 2 potato peeled and cubed
  • 4 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • 1 cup coconut milk
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic, sauté until onions are translucent.
  • Stir in cubed pumpkin, sliced carrots, and cubed potatoes.
  • Pour vegetable broth into the pot and add salt, black pepper, cumin, paprika, and cayenne pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 30 minutes until vegetables are tender.
  • Stir in coconut milk and cook for an additional 5 minutes.
  • Remove from heat and let the stew rest for 10 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

When preparing pumpkin stew, use a pumpkin variety that is sweet and suitable for cooking, such as sugar pumpkin or kabocha, to enhance the flavor of the dish. Adjust the level of cayenne pepper for your preferred spiciness, and feel free to add other seasonal vegetables for added texture and nutrition.
