Ingredients
  

  • 1 cup quinoa rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 bell pepper chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup spinach leaves
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until onion is translucent.
  • Stir in carrots, celery, and bell pepper and cook for 5 minutes.
  • Add rinsed quinoa to the pot and stir to combine.
  • Pour in vegetable broth and add thyme, oregano, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  • Add spinach leaves and lemon juice, stirring until spinach wilts.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, consider roasting the vegetables before adding them to the soup. Additionally, you can substitute vegetable broth with chicken broth for a non-vegetarian version. Adjust the seasoning to your taste, and feel free to add other vegetables like zucchini or peas to enhance the nutritional value.
