  • 1 large mixing bowl
  • 1 sharp knife

Ingredients
  

  • 4 pound beef short ribs
  • 1 cup rhubarb chopped
  • 1 cup apple chopped
  • 1 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 2 clove garlic minced
  • 1 teaspoon smoked paprika

Instructions
 

  • Preheat the oven to 325°F (165°C).
  • Season the short ribs with salt and black pepper.
  • Heat olive oil in the roasting pan over medium-high heat.
  • Sear the short ribs on all sides until browned, then remove from pan.
  • In a mixing bowl, combine rhubarb, apple, barbecue sauce, vinegar, garlic, and smoked paprika.
  • Place the short ribs back in the roasting pan and pour the sauce mixture over them.
  • Cover the roasting pan with foil and place in the oven.
  • Roast for 3 hours or until the meat is tender and pulls away from the bone.
  • Remove from oven and let rest for 15 minutes before serving.

Notes

For the best results, choose fresh rhubarb and apples that are firm and crisp. Adjust the sweetness of the barbecue sauce based on your preference and the tartness of the rhubarb. Be sure to baste the ribs occasionally during cooking to keep them moist and flavorful.
