Equipment

Ingredients
  

  • 2 cup basmati rice rinsed
  • 4 cup water
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 clove garlic minced
  • 1 bell pepper diced
  • 1 pound beef or chicken cubed
  • 1 cup tomato puree
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 2 tablespoon vegetable oil
  • 1 bay leaf
  • 2 cup beef or chicken broth

Instructions
 

  • Add 2 cups of rinsed basmati rice and 4 cups of water to a pot or rice cooker.
  • Cook rice on medium heat until water is absorbed and rice is tender, then set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  • Add chopped onion, minced garlic, and diced bell pepper to the skillet and sauté until softened.
  • Add cubed beef or chicken to the skillet and cook until browned on all sides.
  • Stir in tomato puree and mix well with the meat and vegetables.
  • Season the stew with salt, black pepper, paprika, thyme, and add a bay leaf.
  • Pour in beef or chicken broth and bring the mixture to a simmer.
  • Cover the skillet and let the stew simmer for 30 minutes, stirring occasionally.
  • Allow the stew to rest for 5 minutes before serving.
  • Serve the stew over cooked rice on a plate.

Notes

For a richer flavor, you can marinate the meat with the spices for a few hours before cooking. Additionally, adding vegetables like carrots or peas can make the stew more nutritious. Adjust the seasoning according to your taste preferences, and feel free to add a pinch of chili powder for some heat if desired.
