Ingredients
  

  • 1 small baguette
  • 3 tablespoon olive oil
  • 4 ounce cream cheese softened
  • 2 tablespoon sour cream
  • 1 teaspoon prepared horseradish
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper ground
  • 6 ounce roast beef thinly sliced
  • 2 tablespoon red onion thinly sliced
  • 2 tablespoon fresh chives finely chopped
  • 1 tablespoon capers drained optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Slice the baguette into 12 1/2-inch thick rounds and arrange them in a single layer on the baking sheet.
  • Brush the tops of the baguette slices with olive oil.
  • Bake the baguette slices for 8–10 minutes, or until lightly golden and crisp at the edges, then remove from the oven and let cool for 5 minutes.
  • In a small mixing bowl, combine the cream cheese, sour cream, horseradish, Dijon mustard, salt, and black pepper until smooth and well blended.
  • Spread a generous layer of the cream cheese mixture on each cooled crostini.
  • Fold or roll slices of roast beef and place a small portion on top of each crostini.
  • Top each crostini with a few slices of red onion.
  • Garnish with chopped fresh chives and capers, if using.
  • Arrange the roast beef crostini on a serving platter and serve immediately.

Notes

For best results, toast the baguette just until crisp so it stays crunchy but not hard, and allow it to cool before spreading the cheese mixture so it doesn’t melt. You can prepare the cream cheese spread a day in advance and store it covered in the refrigerator, then assemble the crostini shortly before serving to keep them from getting soggy. Using very thinly sliced deli roast beef makes the bites easier to eat in one or two bites, and you can adjust the horseradish to be milder or hotter depending on your guests’ preferences. If transporting to a party, keep the elements separate and assemble on-site for the freshest texture.
