  • 1 large mixing bowl

Ingredients
  

  • 1 pound baby potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 2 teaspoons fresh rosemary chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the halved baby potatoes in a large mixing bowl.
  • Add olive oil, salt, and black pepper to the bowl with the potatoes.
  • Toss the potatoes until they are evenly coated with the oil and seasonings.
  • Add the minced garlic and chopped rosemary to the bowl and mix well.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for 30 minutes or until the potatoes are golden and tender.
  • Remove the potatoes from the oven and let them rest for 5 minutes before serving.

Notes

For a more intense flavor, you can marinate the potatoes with the oil, garlic, and rosemary mixture for about 30 minutes before roasting. If you prefer crispier potatoes, increase the oven temperature to 425°F (220°C) and reduce the roasting time slightly. Always ensure the potatoes are spread in a single layer on the baking sheet to promote even cooking.
