Ingredients
  

  • 500 grams Carrots peeled and cut into sticks
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 250 grams Ricotta cheese
  • 1 tablespoon Honey
  • 1/2 teaspoon Red pepper flakes
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley chopped

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Place the carrot sticks on a baking sheet and drizzle with olive oil, salt, and black pepper.
  • Toss the carrots to coat them evenly with the oil and seasoning.
  • Roast the carrots in the oven for 20-25 minutes until tender and golden brown.
  • While the carrots roast, whip the ricotta in a mixing bowl using a whisk or hand mixer until smooth and creamy.
  • In a small saucepan, combine honey and red pepper flakes, and heat gently until warmed through.
  • Remove the roasted carrots from the oven and allow them to rest for 5 minutes.
  • Spread the whipped ricotta on a serving platter.
  • Arrange the roasted carrots on top of the ricotta.
  • Drizzle the hot honey over the carrots and ricotta.
  • Squeeze lemon juice over the dish and garnish with chopped parsley before serving.

Notes

For a more intense flavor, consider using heirloom carrots for their vibrant colors and natural sweetness. You can prepare the whipped ricotta a day ahead and store it in the fridge to save time. Adjust the amount of red pepper flakes in the hot honey to suit your spice preference.
