Ingredients
  

  • 500 grams Potatoes cubed
  • 200 grams Feta cheese block
  • 4 cloves Garlic minced
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper ground
  • 1 tablespoon Fresh rosemary chopped
  • 1 tablespoon Lemon juice

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • In a mixing bowl, combine potatoes, olive oil, salt, pepper, and rosemary.
  • Spread the potato mixture evenly on a baking sheet.
  • Place the block of feta cheese in the center of the baking sheet.
  • Sprinkle minced garlic over the feta and potatoes.
  • Bake in the preheated oven for 35-40 minutes or until potatoes are golden and tender.
  • Remove from the oven and drizzle with lemon juice.
  • Let it rest for 5 minutes before serving.

Notes

To ensure even cooking, cut the potatoes into similar-sized cubes. For an extra crispy texture, toss the potatoes midway through baking. Feel free to add other herbs like thyme or oregano to enhance the flavor profile.
