Ingredients
  

  • 2 cup carrots peeled and chopped
  • 2 cup sweet potatoes peeled and chopped
  • 1 cup parsnips peeled and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cup okra sliced
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 can diced tomatoes 14 ounces
  • 4 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, toss carrots, sweet potatoes, and parsnips with olive oil, salt, pepper, paprika, and dried thyme.
  • Spread the root vegetables on a baking sheet and roast in the oven for 25 minutes.
  • In a large pot, heat a bit of olive oil over medium heat and sauté the onions until translucent.
  • Add the garlic and cook for an additional 1 minute.
  • Stir in the okra and cook for another 3 minutes.
  • Pour in the diced tomatoes, vegetable broth, and tomato paste, stirring well.
  • Add cumin, coriander, and cayenne pepper to the pot and bring to a simmer.
  • Once the root vegetables are roasted, add them to the stew and stir to combine.
  • Simmer the stew for 15 minutes, allowing the flavors to meld.
  • Stir in lemon juice and adjust seasoning as needed.
  • Let the stew rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

When preparing this dish, ensure the root vegetables are chopped uniformly for even roasting. If fresh okra is not available, frozen okra can be used, but make sure to thaw it properly. Adjust the spice level to your taste preference by altering the amount of cayenne pepper. This stew pairs well with crusty bread or rice for a more filling meal.
