Equipment

  • 1 large mixing bowl
  • 1 spatula or mixing spoon
  • 1 can opener
  • 1 microwave-safe dish optional

Ingredients
  

  • 2 can corn 15 ounces each, drained
  • 1 can Rotel tomatoes 10 ounces, drained
  • 1 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 bag tortilla chips for serving

Instructions
 

  • In a large mixing bowl, combine the drained corn and Rotel tomatoes.
  • Add mayonnaise to the bowl and mix until well combined.
  • Stir in the shredded cheddar cheese and chopped green onions.
  • Season the mixture with garlic powder and chili powder.
  • Mix all the ingredients thoroughly using a spatula or spoon.
  • Transfer the mixture to a serving dish.
  • Serve immediately with tortilla chips, or refrigerate until ready to serve.
  • Optionally, heat the dip in a microwave-safe dish for a few minutes before serving if a warm dip is desired.

Notes

For a spicier version, consider adding chopped jalapeños or using a spicier variant of Rotel tomatoes. You can also make this dip a day in advance to allow the flavors to meld together. If you're short on time, using pre-shredded cheese and pre-chopped green onions can speed up the preparation.
