Ingredients
  

  • 1 pound ground beef
  • 8 ounces cream cheese cubed
  • 1 can Rotel tomatoes undrained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions
 

  • Place the large skillet over medium heat.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
  • Drain any excess fat from the skillet.
  • Add the cubed cream cheese to the skillet and stir until melted and combined with the beef.
  • Open the can of Rotel tomatoes and pour them into the skillet, stirring to combine.
  • Sprinkle in the chili powder, garlic powder, salt, and pepper, mixing thoroughly.
  • Add the shredded cheddar cheese and stir until fully melted and incorporated.
  • Remove the skillet from heat and let the dip rest for 5 minutes before serving.
  • Serve warm with tortilla chips for dipping.

Notes

For added flavor, consider adding a small diced onion or a minced garlic clove when browning the beef. If you prefer a spicier dip, use a can of hot Rotel tomatoes or add a pinch of cayenne pepper. To keep the dip warm during a party, consider transferring it to a slow cooker on the "warm" setting.
