Equipment

  • 1 Rolling Pin
  • 1 Baking sheet
  • 1 parchment paper sheet
  • 1 Mixing bowl
  • 1 Whisk
  • 1 Saucepan
  • 1 pastry brush

Ingredients

  • 1 sheet puff pastry thawed
  • 1 cup ricotta cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour for dusting
  • 1 1/2 cups fresh mixed berries
  • 1/4 cup sliced almonds
  • 1/4 cup dark chocolate chips
  • 1 tablespoon unsalted butter

Instructions

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry on a lightly floured surface to form a 12-inch circle.
  • Transfer the pastry to a parchment-lined baking sheet.
  • In a mixing bowl, whisk together the ricotta, sugar, and vanilla extract until smooth.
  • Spread the ricotta mixture evenly over the pastry, leaving a 2-inch border.
  • Arrange the mixed berries on top of the ricotta layer.
  • Fold the edges of the pastry over the filling, pleating as needed to enclose the edges.
  • Sprinkle the sliced almonds over the exposed berries.
  • Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown.
  • While the galette is baking, melt the chocolate chips and butter in a saucepan over low heat.
  • Drizzle the melted chocolate over the baked galette.
  • Allow the galette to rest for 15 minutes before serving.

Notes

For best results, ensure the puff pastry remains cold while working with it to prevent it from becoming too soft and difficult to handle. Additionally, feel free to substitute the mixed berries with any seasonal fruit to customize the flavor of your galette.
