Ingredients
  

  • 4 cups mixed greens washed and dried
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 small red onion thinly sliced
  • 1/2 cup black olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste

Instructions
 

  • Combine the mixed greens, cherry tomatoes, cucumber, red onion, and black olives in the large salad bowl.
  • Crumble the feta cheese over the salad mixture.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  • Pour the dressing over the salad and gently toss to combine using salad tongs.
  • Serve immediately and enjoy.

Notes

For extra flavor, consider adding a few sprigs of fresh dill or mint to your salad. If you prefer a bit of crunch, you can toss in some toasted pine nuts or slivered almonds. This salad pairs beautifully with grilled chicken or fish for a more substantial meal.
