Salmon Potato Soup

Ingredients
  

  • 1 pound salmon fillet skinless and diced
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 3 medium potatoes peeled and diced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until onion is translucent.
  • Pour in chicken broth and bring to a boil.
  • Add diced potatoes and cook until tender, about 15 minutes.
  • Reduce the heat to low and stir in the salmon pieces.
  • Add heavy cream, salt, and pepper, stirring gently.
  • Simmer for another 10 minutes until salmon is cooked through.
  • Remove from heat and stir in fresh dill.
  • Let the soup rest for 5 minutes before serving.

Notes

For a richer flavor, consider using smoked salmon or adding a splash of white wine while cooking the onions. If you prefer a thicker soup, mash some of the potatoes against the side of the pot before adding the salmon. Adjust the seasoning to taste, and garnish with additional fresh dill or a sprinkle of paprika for an extra touch.
