Ingredients
  

  • 4 fillets of salmon
  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with aluminum foil.
  • In a medium mixing bowl, whisk together olive oil, honey, lemon juice, garlic powder, salt, and black pepper.
  • Arrange the cubed sweet potatoes on one side of the prepared baking sheet.
  • Drizzle half of the olive oil mixture over the sweet potatoes and toss to coat.
  • Place the salmon fillets on the other side of the baking sheet.
  • Brush the remaining olive oil mixture over the salmon fillets.
  • Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and the salmon is cooked through.
  • Remove the baking sheet from the oven and allow the dish to rest for 5 minutes.
  • Garnish the salmon and sweet potatoes with fresh parsley before serving.

Notes

For best results, ensure the salmon fillets are of even thickness to cook uniformly. If you prefer a crispier texture on the sweet potatoes, you can broil them for an additional 2-3 minutes after baking. Make sure to taste and adjust the seasoning as needed before serving.
