Salsa Chicken and Cauliflower Rice Skillet

Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup salsa
  • 2 cups cauliflower rice
  • 1 cup shredded cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with cumin, garlic powder, salt, and black pepper.
  • Place the chicken in the skillet and cook for 5-7 minutes on each side until golden brown.
  • Pour salsa over the chicken and reduce the heat to low.
  • Cover the skillet and let the chicken simmer in the salsa for 5 minutes.
  • Remove the chicken from the skillet and set it aside to rest.
  • Add cauliflower rice to the skillet and stir it into the salsa.
  • Cook the cauliflower rice for 5 minutes, stirring occasionally.
  • Sprinkle shredded cheese over the cauliflower rice and allow it to melt.
  • Place the chicken back in the skillet on top of the cauliflower rice.
  • Garnish with chopped cilantro before serving.

Notes

For extra flavor, consider marinating the chicken in the spices and olive oil for a few hours before cooking. Make sure to not overcook the cauliflower rice to maintain a nice, slightly crunchy texture. Adjust the level of spiciness by choosing a mild or hot salsa based on your preference.
