Ingredients
  

  • 1 pound sausage sliced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 4 cups chicken broth
  • 1 can diced tomatoes 15 ounces
  • 1 can white beans rinsed and drained, 15 ounces
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup kale chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sausage slices and cook until browned, about 5 minutes.
  • Remove sausage from the pot and set aside.
  • In the same pot, add chopped onion and cook until translucent, about 3 minutes.
  • Stir in minced garlic, diced carrots, and diced celery, cooking for another 5 minutes.
  • Pour in chicken broth and diced tomatoes, bringing the mixture to a simmer.
  • Add the browned sausage back to the pot along with the rinsed beans.
  • Stir in dried thyme, dried oregano, salt, and pepper.
  • Simmer the soup for 20 minutes to allow flavors to meld.
  • Add chopped kale and cook for an additional 5 minutes.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

For a richer flavor, consider using a combination of sweet and spicy sausage. Adjust the seasoning to your preference and feel free to add more vegetables like bell peppers or zucchini. For a thicker consistency, mash some of the beans before adding them to the pot.
