  • 1 Cutting board
  • 1 Wooden spoon

Ingredients
  

  • 1 pound sausage sliced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium head cabbage chopped
  • 2 carrots sliced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 ounces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sausage slices and cook until browned.
  • Remove sausage and set aside.
  • In the same pot, add onion and garlic; sauté until soft.
  • Stir in the cabbage and carrots, cooking for another 5 minutes.
  • Return the sausage to the pot.
  • Pour in chicken broth and diced tomatoes.
  • Season with salt, black pepper, thyme, and bay leaf.
  • Bring to a boil, then reduce heat to low.
  • Cover and simmer for 30 minutes.
  • Remove bay leaf before serving.
  • Let the soup rest for 5 minutes to enhance flavors.

Notes

For extra flavor, consider using a mix of hot and mild sausages, and if you prefer a thicker soup, you can mash some of the cooked vegetables before serving. Adjust seasoning to taste and garnish with fresh parsley for a touch of color and freshness.
