  • 1 large mixing bowl
  • 1 Frying pan

  • 1 cheese grater

Ingredients
  

  • 1 pound breakfast sausage
  • 2 cup frozen hashbrowns thawed
  • 1 cup shredded cheddar cheese
  • 4 large eggs beaten
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions chopped

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cook the sausage in a frying pan over medium heat until browned and cooked through.
  • Drain excess fat from the sausage and set aside.
  • In a large mixing bowl, combine hashbrowns, cooked sausage, and cheddar cheese.
  • In a separate bowl, whisk together eggs, milk, salt, and black pepper.
  • Pour the egg mixture over the hashbrown mixture and stir until well combined.
  • Grease the muffin tin and evenly distribute the mixture into the muffin cups.
  • Sprinkle chopped green onions on top of each hashbrown bite.
  • Bake in the preheated oven for 20-25 minutes, or until golden brown and set.
  • Allow to cool for 5 minutes before removing from the muffin tin.

Notes

To ensure even cooking, make sure the hashbrowns are fully thawed before mixing. You can customize this recipe by adding other ingredients such as bell peppers or mushrooms to the mixture. If you like your bites a bit crispy on top, consider placing them under a broiler for an additional minute or two after baking.
