Ingredients
  

  • 1 pound Italian sausage crumbled
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 ounces
  • 2 cups spinach fresh
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package cheese tortellini 9 ounces, refrigerated
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated

Instructions
 

  • Brown the Italian sausage in a skillet over medium heat until fully cooked, then drain the excess fat.
  • Add the cooked sausage, onion, and garlic to the crockpot.
  • Pour in the chicken broth and diced tomatoes with the juices.
  • Stir in the spinach, Italian seasoning, salt, and pepper.
  • Cover and cook on low for 5 hours.
  • Add the tortellini to the crockpot and cook for an additional 1 hour.
  • Stir in the heavy cream and let it heat through.
  • Serve the soup hot, garnished with grated Parmesan cheese.

Notes

For a richer flavor, consider using a mix of hot and mild Italian sausage. If you prefer a thicker soup, you can mash some of the tortellini or add a cornstarch slurry during the last hour of cooking. Be sure to taste and adjust seasoning before serving, as the saltiness can vary significantly depending on the sausage and chicken broth you use.
