Ingredients
  

  • 1 pound sausage sliced
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 2 cans (15 ounces each) white beans drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups kale chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced sausage and cook until browned.
  • Remove sausage and set aside.
  • In the same pot, add diced onion and sauté until translucent.
  • Add minced garlic and cook for 1 minute.
  • Pour in chicken broth and bring to a simmer.
  • Add white beans, diced tomatoes, thyme, oregano, salt, and pepper.
  • Return sausage to the pot and stir.
  • Simmer for 20 minutes.
  • Stir in chopped kale and cook until wilted.
  • Add lemon juice and stir well.
  • Remove from heat and let rest for 5 minutes before serving.

Notes

For the best flavor, use high-quality sausage and freshly minced garlic. Adjust the seasoning to taste, and consider adding a pinch of red pepper flakes for a little heat. This soup can be made a day in advance, as the flavors deepen when it sits overnight.
