  • 1 chopping board

Ingredients
  

  • 1 cup green lentils rinsed
  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 medium carrots diced
  • 2 stalk celery diced
  • 2 medium apples peeled and chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 4 cup vegetable broth
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onions and garlic, sauté until onions are translucent.
  • Stir in carrots and celery, cook for 5 minutes.
  • Add apples, cinnamon, and cumin, stirring to combine.
  • Pour in vegetable broth and bring to a boil.
  • Add lentils, reduce heat, and simmer uncovered for 30 minutes.
  • Stir in apple cider vinegar, salt, and pepper.
  • Remove from heat and let sit for 10 minutes.
  • Garnish with fresh parsley before serving.

Notes

To enhance the stew's flavor, consider toasting the cumin and cinnamon in the pot before adding the olive oil and other ingredients. This will release their aromatic oils and deepen the flavor profile of the dish. Additionally, if you prefer a thicker stew, you can mash some of the lentils against the side of the pot before serving.
