Ingredients
  

  • 2 pound beef chuck cut into 1-inch cubes
  • 2 tablespoon vegetable oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 4 cup beef broth
  • 2 tablespoon tomato paste
  • 2 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large carrots peeled and sliced
  • 4 medium potatoes peeled and cubed
  • 2 cup frozen peas

Instructions
 

  • Heat the vegetable oil in a large pot over medium-high heat.
  • Add the beef cubes in batches, browning them on all sides.
  • Remove the beef and set aside, then add the onion and garlic to the pot.
  • Sauté until the onion becomes translucent.
  • Stir in the tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  • Return the beef to the pot and pour in the beef broth.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and simmer for 1 hour.
  • Add the carrots and potatoes to the pot.
  • Continue to simmer for another 30-40 minutes until the vegetables are tender.
  • Stir in the peas and cook for an additional 5 minutes.
  • Remove from heat and let the stew rest for 15 minutes before serving.

Notes

For a richer flavor, consider substituting part of the beef broth with red wine. To ensure even cooking, cut the beef and vegetables into uniform pieces. Adjust seasonings to taste, and feel free to add other herbs like rosemary or bay leaves for added depth.
