Ingredients
  

  • 1 pound beef stew meat cubed
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 2 clove garlic minced
  • 2 cup pumpkin peeled and diced
  • 3 cup beef broth
  • 1 cup water
  • 2 teaspoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 carrots sliced
  • 2 potatoes peeled and cubed
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium-high heat.
  • Add beef stew meat and brown on all sides, then remove from the pot and set aside.
  • Add onion and garlic to the pot, sauté until onion is translucent.
  • Return beef to the pot and stir in pumpkin, beef broth, and water.
  • Season with thyme, salt, and black pepper, then add carrots, potatoes, and bay leaf.
  • Bring the mixture to a boil, then reduce heat to low and cover.
  • Simmer for 1 hour 30 minutes, stirring occasionally, until meat and vegetables are tender.
  • Remove the bay leaf and adjust seasoning if necessary.
  • Allow stew to rest for 10 minutes before serving.

Notes

When cooking this dish, ensure the beef is browned well for a richer flavor, and consider using a heavy-bottomed pot to maintain even heat. You can also replace fresh thyme with dried thyme if needed, but reduce the quantity to 1 teaspoon to avoid overpowering the stew.
