Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1 lime juiced
  • 2 tablespoons cilantro chopped

Instructions
 

  • Heat olive oil in the skillet over medium heat.
  • Season shrimp with salt and black pepper.
  • Cook shrimp in the skillet for 2-3 minutes on each side until pink and opaque.
  • Remove shrimp from skillet and set aside.
  • In a mixing bowl, combine diced avocados, cherry tomatoes, red onion, lime juice, and cilantro.
  • Add cooked shrimp to the avocado mixture and gently toss to combine.
  • Serve immediately or chill in the refrigerator before serving.

Notes

For the best results, ensure the avocados are ripe and the shrimp are fresh. Adjust the lime juice and cilantro to taste, and consider adding a dash of hot sauce for a spicy kick. This salad is versatile and can be served as a light main course or as a side dish.
