Ingredients
  

  • 1 pound cooked shrimp peeled and deveined
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1/2 cup celery diced
  • 1/4 cup red onion finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices whole-grain bread
  • 2 cups lettuce leaves
  • 1 tablespoon butter softened

Instructions
 

  • Boil shrimp in a medium-sized pot for 3-5 minutes until pink and opaque.
  • Drain and let shrimp cool for 10 minutes.
  • Chop shrimp into small pieces and place in a mixing bowl.
  • Add mayonnaise, lemon juice, dill, celery, red onion, salt, and pepper to the bowl and mix well.
  • Toast bread slices using a toaster.
  • Spread butter evenly on one side of each toasted bread slice.
  • Place a layer of lettuce on the buttered side of 4 bread slices.
  • Spoon the shrimp mixture evenly over the lettuce.
  • Top with remaining bread slices, buttered side down.

Notes

For the best flavor, use fresh shrimp and ensure they are well-drained before chopping. Adjust the seasoning to taste, and consider adding a pinch of cayenne pepper for a slight kick. Serve immediately after assembling to enjoy the crunchiness of the bread.
