Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 green bell pepper diced
  • 1 can diced tomatoes (14 ounces)
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 cup rice
  • 2 green onions sliced

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until softened.
  • Stir in green bell pepper and cook for another 3 minutes.
  • Add diced tomatoes and chicken broth to the pot.
  • Season with paprika, thyme, cayenne pepper, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to simmer.
  • Add rice and cover the pot, cooking until rice is tender.
  • Stir in shrimp and cook until they turn pink.
  • Remove from heat and let the stew rest for 5 minutes.
  • Garnish with sliced green onions before serving.

Notes

For best results, make sure to use fresh shrimp and adjust the cayenne pepper to suit your spice preference. If you want a thicker stew, let it simmer for a few more minutes to allow the flavors to deepen and the sauce to thicken.
