Ingredients
  

  • 1 medium ripe banana mashed
  • 1 tablespoon unsalted butter melted
  • 1 tablespoon milk any type
  • 1 tablespoon brown sugar packed
  • 1 teaspoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour leveled
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon ground cinnamon optional
  • 1 pinch salt
  • 1 tablespoon chocolate chips optional
  • 1 tablespoon chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease the ramekin or mini loaf pan.
  • In the small mixing bowl, mash the banana thoroughly with a fork until mostly smooth.
  • Stir in the melted butter, milk, brown sugar, granulated sugar, and vanilla extract until well combined.
  • Add the flour, baking powder, cinnamon, and salt to the wet ingredients and gently mix until just combined without overmixing.
  • Fold in chocolate chips and walnuts if using, distributing them evenly through the batter.
  • Pour the batter into the prepared ramekin or pan and smooth the top with the back of a spoon.
  • Place the ramekin on a baking sheet if desired and bake for 18–22 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  • Let the banana bread rest for 5 minutes before serving to set the texture and cool slightly.

Notes

For best results, use a very ripe banana with plenty of brown spots for maximum sweetness and flavor, and avoid overmixing the batter so the bread stays tender instead of dense. If your banana is small, add a teaspoon or two of extra milk to keep the batter from becoming too thick, and adjust baking time slightly based on your oven and the depth of your ramekin. You can customize the flavor with a pinch of nutmeg, a spoonful of oats on top for crunch, or by swapping the butter for oil to make it dairy-free, and this bread is especially good served warm with a pat of butter, a drizzle of honey, or a spoon of yogurt on top.
